- 8 oz lo mein noodles or spaghetti
- 1 lb medium shrimp, peeled and deveined
- 2 tablespoons vegetable oil
- 1 red bell pepper, thinly sliced
- 1 cup shredded cabbage or snow peas
- 1 carrot, julienned
- 3 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce (optional)
- 1 tablespoon oyster sauce
- 1 teaspoon sugar
- 1 teaspoon sesame oil
- Optional: green onions and sesame seeds for garnish
Instructions
- Cook the noodles according to package directions until just al dente. Drain, rinse under cool water, and set aside.
- In a small bowl, mix together the soy sauces, oyster sauce, sugar, and a splash of water. Set aside.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add shrimp and cook for 1-2 minutes per side until pink and opaque. Remove and set aside.
- Add remaining oil to the pan. Stir-fry bell pepper, cabbage, and carrot for 2-3 minutes until slightly tender but still crisp.
- Push veggies to the side and add garlic and ginger to the center. Stir-fry for 30 seconds until fragrant.
- Return the shrimp to the pan, add the cooked noodles, and pour in the sauce. Toss everything together for 1-2 minutes until evenly coated and heated through.
- Drizzle with sesame oil, toss again, and remove from heat. Garnish if desired and serve immediately.
